Crispy Chicken with Parsley. Baby Rocket and Central Otago Apricot & Orange Sauce
Basil.and.lime (Instagram) have created this delicious recipe…..we are so lucky!
Recipe:
500g skinless chicken thigh fillets, chopped
1 egg, beaten
1/2 tsp garlic powder
1/2c plain flour
1/2c cornflour
1 tsp salt
1/4 tsp ground black pepper
Fine chopped fresh parsley
Baby rocket

Method:
Mix the chicken with the beaten egg in a bowl.
In another medium bowl, combine the garlic powder, plain flour, cornflour, salt, black pepper and parsley.
Heat a cast iron fry pan on medium high and pour in about 1cm of canola oil. When the oil is hot, dredge the chicken in the dry flour coating and shallow fry until golden brown and cooked through. Do this in batches if necessary.
Serve the chicken with rocket, extra parsley and pour The Gold Miner sauce on top.
