Feta, Cheddar & Red Capsicum Scones with Wild Thyme Onion Jam

Our wonderful foodie friends at basil.and.lime have crafted this delicious batch of scones, it’s a flavoursome savoury scone that pairs well with our ‘The Shearer, Wild Thyme Onion Jam’.

Recipe:

Makes 10

2 1/2 c self-raising flour

2 c grated cheddar cheese

1 red capsicum, fine diced

1/2 red onion, finely diced

1 tsp salt

Black pepper1/3 c plain yoghurt (or sour cream)

1 1/2 c milk

100g feta, crumbled

Method:

Preheat oven to 190C fan-forced and line two baking trays with baking paper.

In a large mixing bowl, mix the flour with the cheese, capsicum, red onion, salt and pepper.

Fold in the yoghurt and the milk until combined, but do not over-mix. If it’s too wet add a little flour, and if it’s too dry, add a little milk.

Gently fold in the feta.

Place large spoonful’s of the dough onto the baking paper, leaving plenty of space between each one.

Bake for 18-20mins, or until they are golden brown and cooked through.

Remove from the oven and while still hot, melt butter onto the tops. Serve with butter and The Shearer, Wild Thyme Onion Jam.
